This blend was sorted for defects before beginning its Washed processing. Cherries are first fermented whole in the open air for 12 hours before being pulped. Then, the pulped cherries are moved to concrete fermentation tanks where they are fermented for up to 48 hours. Once this fermentation is complete, they are then fully washed before the drying process begins. The washed seeds are dried at 35–42° C for 10 days in a highly technified mechanical dryer.
