This Washed Caturra coffee was sorted for defects before being processed. The cherries are fermented whole for up to 20 hours before being pulped. Then, the coffee is fermented anaerobically for up to 60 hours, completing its fermentation once it reaches a target PH level. The seeds are then fully washed before being moved on to drying, where the coffee is dried at a low temperature for up to 15 days. The drying process is halted once the coffee reaches 15% humidity and it is stored in GrainPro bags. The final drying to 11% humidity is completed after the coffee is contracted, just before the final milling and packaging.
